One of the things I find very impressive about this engine besides it's incredible power, are the 'cylinder drain cocks' - small holes on the top of the valve chests. These small holes relieve the cylinder of condensate and then become sealed with steam oil as the oil is picked up from the lubricator. When the engine is started there can be a few squirts of hot water and then a 'witness' of oil as it becomes sealed.
There also serve as a rough guide to controlling the valve on the lubricator, since when the engine is receiving too little oil water begins to bubble from them, particularly when increasing the speed, as can be seen at 00:48, I'd forgotten to open the lubricator valve.

I'd like to remove the surface rust from the 4 vertical steel pillars, but I'm worried that millions of tiny bits of wire wool dust will settle in and amongst the bearings and cause a greater rust problem.

Miles, you might consider giving 3M Scotch-Brite pads a try in that situation. I don't believe they are likely to crumble at all like steel wool does, yet they do seem to do a good job of removing light rust scale. Rub it down with a light oil to collect any particulates, and then wipe it down thoroughly to collect all of that now dirty oil, and you should be fine!
